chocolate cake recipe for celiac people?

I would like to bake a birthday cake for a celiac friend. any easy gluten free recipe?

I got this recipe off of a cocoa container. I replaced oil with applesauce to make it Fat Free and it worked just fine. It is a good recipe for chocolate cake everyone liked it.

Fat Free Chocolate Cake

Ingredients:

1 ½ c. sugar
1 ¾ c. all-purpose flour
¾ c. cocoa
1 ½ teaspoon baking powder
1 ½ teaspoon baking soda
1/3 c. liquid egg whites (equivalent to 2 eggs)
1 c. milk
½ c. applesauce
2 teaspoon artificial vanilla
1 c. boiling water

Directions:

Heat oven to 350 F.
Grease and flour a 9 inch squared baking pan.

Combine dry ingredients in a large bowl.
Add eggs, milk, applesauce and artificial vanilla; beat on medium for 2 min.
Stir in boiling water (batter will be thin). Pour into pans.

Bake for 30-35 min. or until wooden pick inserted in center comes out clean.
Cool for 10 min.
Remove from pan to wire rack and cool completely.

CUPCAKES: Line 2 ½ in. muffin cups with paper bake cups. Fill cups 2/3 full with batter. Bake at 350 F for 22-25 min.

    INGREDIENTS
    12 ounces semisweet chocolate chips
    4 (1 ounce) squares unsweetened chocolate
    1 1/2 cups butter, melted
    1 3/4 cups white sugar
    1/2 cup water
    7 eggs
    2 cups whipped cream

    DIRECTIONS
    Preheat oven to 350 degrees F (175 degrees C). Grease a 10 inch round pan and line bottom with parchment paper.
    Chop chocolate squares and place in a large bowl with chocolate chips. Add melted butter. Heat water and 1 1/2 cups sugar in a saucepan until boiling, then pour over chocolate. Stir until smooth.
    In a separate bowl, whip eggs with remaining 1/4 cup sugar until thick. Fold into chocolate mixture. Pour batter into 10 inch pan.
    Place 10 inch pan on a cookie sheet in the oven and fill the cookie sheet with water.
    Bake at 350 degrees F (175 degrees C) for 40 to 50 minutes. Remove from oven. Cool and refrigerate for several hours. Be extremely careful not to burn yourself on the hot water when removing the sheet pan from the oven.
    Dip the pan in hot water to remove cooled cake. Garnish with whipped cream and serve.

    The Gluten Free Gourmet Cooks Fast and Healthy by Bette Hagman has about 20 pages of cake recipes in it and you can get that cookbook at Barnes and Noble among other places. There are mixes available at Whole Foods that are gluten free.
    I was at Kroger’s last night and Pamela’s has a chocolate cake mix and dark chocolate icing mixes out– both GF.

    I tell you I do NOT bake from scratch but always use this mix. EVERYONE loves it and they can never tell its gluten free!

    The chocolate cake recipe on the back of the Bob’s Red Mill gluten free flour bag turns out good. It is moist and has a great flavor. It is easy to make in a bundt pan.

    Wicked Gluten Free Chocolate Cake

    125g (4 oz) ground almonds
    250g (8 oz) caster sugar
    2 level tblsp hot chocolate mix
    4 egg whites
    275ml (½ UK pint, 1¼ US cups) double (heavy) cream, whipped
    icing sugar

    Preheat oven to 190°C (375°F, gas mark 5).

    Dissolve hot chocolate mix in the least amount of boiling water possible. Stir in almonds and sugar and mix well.

    Whisk egg whites until stiff, fold in the almond mixture.

    Divide between two 18cm (7") loose bottomed cake tins. Level off.

    Bake for ¾-1 hour.

    Cool.

    Sandwich together with the cream, sprinkle with icing sugar and serve.
